Day 1.Cheese Ravioli And Red Pepper Salad.
1 Red Capsicum.
2 tomatoes.
2 tsp balsamic vinegar.
1 tbsp olive oil.
1 clove of garlic.
250g fresh green ravioli.
6 basil leaves,finely sliced.
Halve,seed and wash capsicums,slice finely.
Cut tomatoes into small pieces.
In a salad bowl mix tomato,vinegar,oil,garlic and some pepper.
Put the Ravioli in lightly salted water cook until tender.
Drain the Ravioli and then cool in cold water.
Allow all water to drain away then stir into salad.
Well its 2009 i am sitting out here in the outback,having a holiday on the banks of a river,the sun is up the dew is rising like the souls of the dead,the fishing is good.
Day 2.Creamed Leek And Mushroom Soup.
2 leeks.
1 small carrot.
200grms Mushrooms.
Half a cup of rice.
6 cups of chicken stock.
2tbsp chopped parsley.
Gently fry the Leeks diced carrots and mushrooms.
Add rice and chicken stock.
cook for 45 mins.
Blend 2 thirds of the soup to a puree.
return to pot and reheat.
stir in chopped parsley and sprinkle with pepper.
It looks like a storm brewing the ants have gone crazy the sky is dark,i decide to head of into town to restock.Food,water and a hot shower ride out the storm in comfort not wanting to be trapped in the rising water.
Half a red capsicum.
1Cup of Pumpkin flesh,cut into cubes.
3 tbsp water.
a little oil.
4 chicken fillets.
juice of half a lemon.
2 tbs of chopped parsley.
1 tbsp grated Parmesan cheese.
freshly ground black pepper.
Wash and dice Capsicum.
Place pumpkin and capsicum in a saucepan.
with water and cook until soft.
Blend Capsicum and pumpkin to a smooth,
sauce.
Fry chicken on both sides on a medium heat.
Add lemon juice and toss chicken,
then add the vegetable sauce.
reheat and then serve.
Sprinkled with the Parsley and Parmesan.
Seasoned with a little pepper.
Well it blew a gale and totally flooded all the camping spots,Two old people who thought they new to much, decided to stay at the base of the hill and totally ignore our advice, what would young people know? when it rained they got water up to the base of their van,and they came knocking and crying,we didn't say a word, we all packed up and left them there.
